This Wild Ferment Chardonnay is made from Dijon clone grapes grown in the Highweald Vineyard in West Sussex. The juice is allowed to ferment into wine without intervention and aged for twelve months, the wine is bottled without filtration and only a small amount of sulphur is added to maintain the expression of origin, variety and of course, quality.
A delicate blossom aroma introduces a medley of orchard fruits. The balanced palate is anchored by a crisp russet apple acidity, while a creamy texture adds elegance, with lingering hints of citrus on the finish.
